1st-gen s10 or 1st-gen ranger wouldn't be the worst to be fitted with a 1.6idi... but a 1.9 vw would be more suitable, if you go with a turbocharged one it can be reasonable even in a 2nd-gen s10...

VW Truck (aka Rabbit or Caddy) would be the least mods...

That's a hard question. Someone would have to have intimate knowledge of this swap. Did you try searching?

how much would need to be changed?- like bellhousing adapter, motor mounts, flywheel? I have never done a swap but I do very well in custom fabrication.

i don't remember what exactly need to be changed, just remember about the bellhousing adapter, but back here is not so hard to find ready plug n' play kits to adapt vw engines (from those ea827 gassers like used in those vw fox or the idi/sdi/tdi) into chevy gearboxes, specially the chevette's one...

    Default diesel small trucks

GM did use a Isuzu diesel in the love-pup. Ford, Mazda and Mitsubishi did use a Mitsubishi diesel. Nissan did make some smaller diesel pick ups.
    1990 f150 4BTA, md50r2 3.50 gears.
1991 Mitsubishi (fuso) FE flatbed 5 speed.

i don't know where you could get one of those kits in the u.s., but as you said you can do custom fabrication by yourself, good luck...
