I want a head gasket set and not Chinese junk....
I'm finding them on ebay for $50 for FP diesel and up to over $200
Are there some that are way better than others?

Well, Im too late, but I was going to warn you against having the head surfaced unless its needed. There is a spec for this. All that is needed is a machinists straight edge and a set of feller gauges. Most of the time, heads (and decks) are well within spec. So, surfacing isnt needed. This saves money, time, material, and valve to piston issues on some engines.
I had a head from a John Deere 4045 a while back, that I sent into a shop, for a valve job only . I covered the head face in tape,
with the words " DO NOT TOUCH THE FACE", as it was Perfect. The Old Fossil that ran the shop took a flat Block with 40 grit
and PREPPED it for me. Least to say I was AGITATED !
I wouldve lost it. Shit like that is why I do as much as possible myself. I spent plenty of money at Goodson just so I didnt have to rely on some yayhoo at a "machine shop" to do a "valve job".

Not many personal engines have valve jobs done at home, that's why some take their heads to a engine re-builder, not a machine shop , that is what I did.
